Plant Powered: Here's How to Celebrate World Vegetarian Day

Vegetables are more than just "good for you." Each variety of vegetable has its own distinct shape, size, taste and texture — plus its own health benefits. Millions of people enjoy and practice vegetarian lifestyles, whether for health reasons, environmental concerns, or just because they love vegetables. In order to celebrate vegetarians, the North American Vegetarian Society founded World Vegetarian Day in 1977. The day, celebrated on October 1, was endorsed by the International Vegetarian Union in 1978.
Here are some clips and yummy recipes to help celebrate vegetarianism and fresh produce on World Vegetarian Day, 43 years later.
Nothing but Vegetables
Let's face it, vegetables are good in practically anything. Whether they're disguised in a dish or are the main event, you can't go wrong with fresh veggies. Each vegetable has its own distinct flavor, so combining multiple into one dish can create a symphony of perfect produce. Maryline’s ratatouille is an example of that.
